Use the mkisofs (make ISO file system) tool. I think it is available
through your favourite UNIX ftp sites.
Or you can order a copy of GEAR for UNIX from Elektroson. It runs on Sun
workstations (Sun OS 4.1.x, Solaris 2.3) and HP9000/700 (HP/UX 9.01).
You can format your data in ISO and XA images and also write 'foreign'
file system images. Output is to file, CDR or premaster tape. 
Rockridge extensions support is soon to be expected for Sun.

BTW: it's also available for Windows, DOS and Macintosh but you don;t
need that I think :-)
